Pork and Seasoning:
  • 1 (2 lbs) pork tenderloin
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • 2 teaspoons dried rosemary
  • 1 teaspoon salt
  • 1 tablespoon olive oil, extra-virgin, divided
Pressure Cooking Liquid and Gravy:
  • 2 tablespoons soy sauce, low sodium
  • ¾ cup chicken broth, low sodium
  • 2 tablespoons maple syrup or honey
  • 2 teaspoons Dijon mustard
Cornstarch Slurry:
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Combine garlic powder, rosemary, thyme, salt, and black pepper in a bowl.
  • Mix chicken broth, soy sauce, maple syrup or honey, and Dijon mustard in another bowl.
  • Rub the pork tenderloin with 1/2 tablespoon of olive oil and then dredge in the seasoning mixture.
  • Put the remaining olive oil in your Instant Pot and hit the “Sauté” button. Then press the “Adjust” button, so it is on the “More” setting. This means that it will now be sautéed over medium-high heat.
  • When the Instant Pot indicator reads HOT, add the seasoned pork tenderloin. Sauté for about 3 minutes, stirring frequently until the tenderloin is browned. Add a little chicken broth to deglaze if the pork bits stick the pot and scrape with the wooden spatula.
  • Stir the liquid and gravy mixture in the Instant Pot. Mix scrupulously until all the ingredients are well combined.
  • Now, fasten the lid, press the “Keep Warm/Cancel” button. Hit the “Manual” or “Pressure” button and cook for about 4 minutes at high pressure. Rest assured that the vent is closed.
  • After 4 minutes, do the natural pressure release for 12 minutes. Unlock the vent to release the remaining pressure.
  • Open the lid and dish out the pork on to a cutting board. Set aside for about 10 minutes while you prepare the gravy.
  • Select “Cancel” and hit the “Sauté” button again. Press “Adjust” and “Low”.
  • Make the cornstarch slurry by whisking cornstarch with water in a bowl. Whisk well to avoid the formation of lumps.
  • Stir in this cornstarch mixture to the Instant Pot and allow to simmer on “Sauté” mode for about 3 minutes, constantly stirring until the desired thickness of the sauce is attained.
  • Slice the pork crosswise into ½-inch pieces and return to the Instant Pot.
  • Combine the tenderloin pieces well with the gravy and dish out to serve warm.
